Rice does go bad, and how quickly that happens depends a lot on the type of rice, how it’s stored, and whether it’s been exposed to air. Brown rice, on the other hand, has natural oils that make it go rancid much faster—usually within 6 to 12 months.
Before cooking, inspect the rice. If it smells strange, feels damp, shows signs of bugs or mold, or doesn’t cook right, it’s safest to toss it.
1. Smell
Fresh rice smells neutral or faintly starchy. If it smells musty or sour, or not normal in any way, that’s a red flag.
2. Appearance
Look for:
- Moisture or clumps: Dry rice should be, well, dry. Any dampness or sticking together could mean it absorbed humidity and is no longer safe.
- Mold: Even a tiny bit of mold means it’s time to throw the whole batch out.
- Discoloration: A yellow or gray tint in white rice usually means spoilage.
3. Signs of Insects
Pantry bugs love rice. Check for:
- Webbing or holes in packaging
- Tiny black or brown beetles
- Larvae or dust-like residue
Even if you don’t see anything moving, insect eggs might be present. If you’re not storing rice in an airtight container, it’s always smart to freeze it first for a few days to kill anything living in it.

4. Cooking Results
If your rice doesn’t soften after extended boiling, it may be stale or too old. Rice that’s too dry or old can stay crunchy no matter how long you cook it.

🧊 What About Cooked Rice?
Cooked rice goes bad much faster. Refrigerated cooked rice lasts about 4–6 days, and can be frozen for up to 6 months. If you see slime, mold, or it smells sour—don’t risk it.

Final Thoughts
Rice is incredibly shelf-stable when stored right, but it’s not invincible. Air, moisture, light, and heat are its biggest enemies—especially for brown rice. When in doubt, check the smell, texture, and look of your rice before using it.
